Ricotta Blueberry Cake (56k gets crumbs) by toplitzin Visit Thread
Now it is time for my tasty Ricotta Blueberry Cake. it would please me to have you follow along. ready? good.

First, we need our ingredients:


from those pictures we will need the items in the following quantities:
8oz Fresh Ricotta Cheese
1 cup sugar
2 eggs
2 cups AP flour
1/2tsp salt
1 tsp Baking powder
Zest of 1 lemon
1/2 cup dried blueberries (i used Mariani brand, Your store may vary)

8" cake pan, buttered and floured


Things you dont see: an oven set to 350. unfortunately there will be no jews in this oven today. However, there is a jew operating the oven.

Ok have it all? good. lets go.

in your mixer, mix the sugar and the ricotta for 10 minutes.

While the cheese and sugar is mixing, lets work on the rest.
Separate your eggs like so


now check on your cheese and sugar, is it still doing its thing? looks like this?

we are on the right track then. carry on.

now, in your handy dandy sifter of justice place the following:
2 cups of flour
1/2 tsp salt
1 tsp baking powder
see?

Easy!

now start sifting. into a bowl please.


All sifted? goody. now take a break, your cheese and sugar still has some time left. how about some lunch? me, im having sweedish meatballs. i cooked them in the oven that was preheated to 350. mmmm meatballs


ok, that was good, now back to the cake.
your cheese and sugar should be all nice and mixed. go ahead and add your egg yolks. it should look tasty like this.


now add this goop to your flour and mix in, also add your lemon zest.

MIXING!


MOSTLY MIXED!

Now leave that lump of dough alone, and start whipping egg whites.
Start!


Whipped! Soft peaks are what we have here.


ok, now mix in your blueberries and a scoopfull of the egg whites to soften the batter, believe me, it needs it.


ok, now fold in the rest of the egg whites.


Remember that pan we buttered and flowered. well go get it. put the batter in it and sorta even it out if you can. place it in the oven and set a timer for 45 minutes.

Baking!


ok. 45 minutes are up, get a toothpick and check your cake, if it comes out clean, its done. pull your cake and turn it onto a wire rack to cool, like so!


There you have it! Serve cool and dusted with powdered sugar.
